In addition to tuna and spinach salad topped with lemon ginger dressing, this is what Joshua and I shared for lunch. It is deeeeeelicious!
Apple, Pear, and Walnut Salad
2 red and 2 green apples, cored and diced (but not peeled)
2 anjou pears, cored and diced (again with the not peeled)
zest of 2 oranges
2 tbsp orange juice
2 tbsp red wine vinegar
1/3 cup halved, toasted or raw walnuts
1/3 cup raisins (I used Craisins)
salt and freshly ground pepper, to taste
Thrown in a bowl, tossed, and voila. Yummy apple, pear, and walnut salad. Brought to you by some website.
